California Trip

*Warning: You are about to see an Epic Post*

About a month ago I we took a trip to Southern California. Most of my extended family lives out there. I hadn't been there for 4 or 5 years. Lack of money, babies, the long trip, and the prospect of going without Jon have kept me away. But finally this year things seemed to come together, and I really felt and urgency to go. I had to start the trek without Jon (he couldn't take time off), which for me was extremely daunting. I know other women who do trips like this with no help and they do great-go them! I was pretty worried about it, so I recruited my Mom, Lexie and Adam to come with me.

We headed down at 5:30a on a Sunday morning. I drove most of the way and I really like that. It makes the trip seem soooo much more progressive! I have never actually driven on a road trip and now I prefer to drive, rather than ride. It took us 12 hrs, as we stopped twice to eat and let the kids play at the play place and we hit traffic outside of Vegas, and some around San Bernardino. Adam was a huge help keeping the boys entertained. And it was so nice to not be alone with the kiddos.

We stayed at my Nana and Papa's (My Mom's parents, since teenagehood) house in Temecula. When we got there she had a yummy dinner ready for us. And I am so so sad that I didn't take ANY pictures while we were with them!! :( :(

On Monday, after the Max regretfully woke up at 5:30a Utah time, for the 3rd day in a row and woke up Zac, Adam and me-I should have brought the portacrib-we got ready for the day and headed toward San Diego to visit Grandma Edie (My Mom's biological Mom) at her rest home. We stopped at Ross to get her a few gifts and ate at Rubio's for lunch. It was so good to see Grandma. It was a little hard to talk to her because I didn't know if she was understanding. My mom was a good example to help me feel more comfortable talking to her. My grandma's health is ok. She can't hear very well and can't see out of one eye. She didn't have very much emotion and barely talked. But I am so so so glad she got to meet the boys. They are the only great grandkids for her and this was the first time she got to meet them. The boys were so good and were glad to meet her too.


Even after Max spilled her denture solution all over, she gave him this little stuffed animal that he grew very attached to.


Max was exhausted and would just not sleep. Even in the car, he only slept maybe 15 mins. After stressing to the point of tears with 2 pre-teens relentlessly, loudly, messing around in the back seat, hitting my seat and me trying to talk on the phone, and wishing Max would sleep and eat more, I called walmart and target to see if they had a cheap portacrib. We headed to target before we got home so I could get a portacrib.

When we got to Nana's I fed Max and put him to bed at 6p. Then Lexie was a gem and stayed to babysit while Mom, Adam, Zac and I went to Uncle Tad's (mom's bro) to swim and get dinner. He has a cool pool with the dark floor. Zac walked off the large step without knowing and gave us a little scare trying to unsuccessfully keep himself afloat. As he got more confident he would jump in the pool to me, and loved to use his new goggles to see under the water. It was a relaxing evening, and then we grabbed some In and Out for dinner. I liked it more than I remembered.

Then the next day, Tuesday, we headed to San Elijo Beach. To meet up with my Dad's side of the family. My Grandparents' ward was camping there for the week. So my the Kolb's had a site and who ever was around would come and go as they could. It was so fun. Becky and Darren and their family, and a few of Tim's kids were camping too. We met up with Aunt Lori and my cousin Lindsay and her kids and headed to the beach for the day.

Then we had lunch, and surprisingly Max ate...not that it was healthy, but it was calories.

Max also LOVES to play in the sand and get it all over. He puts it in and out and on and wet and dry.



Max hated the water and waves. He thought it was pretty cool at first, but I think once I let go of his hand to walk in the half inch water that was pulling sand away from his feet, he fell and would not get near the water happily. Even when I was holding him and in 6 inch water was clinging to me.

Max was pretty tired and after we washed all the sand off he took a nap for a couple hours-awesome! Zac wanted to rest with him . . . for 2 mins, then went to play.

On the way home Lori took us to dinner at Oscar's and . . . or Something and Oscar's (...? don't remember) to avoid the traffic. It was sooo good and fun to visit some more with Lindsay and her kids. Then we took a dip in the hot tub to de-sand. Max was even scared of water in the hot tub.

The next day, Wednesday, we went to my Aunt Lori's in Fallbrook (15-20 mins from Temecula) and hung out with my cousin Lindsay and her kiddos. It was fun to just relax at the pool-no sand.

Lexie got so burned from the beach and felt sick so she stayed at Nana's. Mom hung out with Nana that day. So we and the boys went to hang out.


Then my Dad flew in to visit family and my Mom and the siblings went to stay at my Aunt Lori's for the rest of the trip.

The next day, Thursday, we hung out at Nana's and took it easy and visited. That was so fun. It was been years and years since I just chatted with her. I wish I could go and shoot the breeze more with her. I really miss her. My family used to live in CA til I was 7 and we got to see Nana and Papa all the time!

Then Jon flew into San Diego at 5p (didn't think about traffic when I booked the flight... :P). I easily found the airport and the tiny cell phone lot, and made good time. Driving in southern California wasn't as bad as I thought, but we were far from LA. And I tried to avoid rush hour(s), and I never got lost! It was so fun to see Jon! We were all excited for him to join us. Then we headed to Lori and Ray's for a BBQ and swimming.

Zac loves this little fish. Its "Nemo" and swims on its own. Its pretty cool!


This was all the adults that were there: L-R, Mom, dad, becky, darren, me, jon, gma, gpa, viri, chris, kim, ray, lori, kay, and farron. It was so good to see the family. Still there were A LOT missing. Jon hadn't met 6 of these family members, and there are still more to go. But it was nice for him to finally meet them after 6 years of being in the family.

We ate some good food, played a game and charades and enjoyed getting reaquainted.

The next day, Friday, we went to the beach again. Jon hit the waves and boogie boarded with some cousins.

Then the next day, Saturday, we went to the San Diego Zoo. First Nana and Papa took us to the IHOP. Again, I wish I had pictures with Nana and Papa! :( We couldn't decide what to do, the Wild Animal Park, SeaWorld, the Pier, or the Zoo. The Zoo won out since it wasn't so pricey or hot and the kids had never been to a zoo yet.

Nana suggested we ride the tour bus first to see what we wanted to look at rather than aimless wandering around the huge park.

We chose to sit on the bottom level of the bus. Good choice, its out of the sun and you can see the exhibits better, contrary to popular belief, as shown by the huge line for the upper level and small line for the lower level.

(Notice Max's feet? No shoes. I cannot get him to keep shoes on. One problem is his feet are SO narrow, nothing fits him. They fall off him or give him blisters. All the shoes we can find are made for little kiddies with chubby feet which are 90% of wearers-which are adorable don't get me wrong. But what about Max? Anything stylish for narrow feet kids?? Plus he takes them off any chance he gets anyway. So I have basically given up and I let him walk around barefoot much of the time.)

This is a really pretty zoo. This is a little waterfall and stream that are at the tram line.


Lots of greenery! And they grow plants and trees that are native to where the animals are from. They grow some of the food that the animals eat.





Zac on this chrome Polar Bear structure. We went under to see the polar bears in the water and they put on a great 5 min show for us. We have video, but have yet to upload it. Maybe I will later. Its pretty cool!

Then we went to see the Panda Bear. You have to be very quiet when you go in and they only want a certain number to go in at a time. So there was a 15 min line.

But it was so cool to see. The black and white is so striking.


Zac was pretty whiny the whole time. So we would bribe him with different things along the way. After the bus we will get a snack, after the reptiles we will ride the tram, after the polar bear we will get a churro, after the elephants and panda we will get your face painted... so while Daddy and Max waited in line to see the panda. I took Zac to get his face painted as Alex the lion.

Then we grabbed the moving sidewalk to go see the gorillas which were MIA, and the monkeys.


Then we stopped for a while to see the flamingos. I don't know why but they were facinating to just stare at up close-balancing on one leg constantly, backward bending knees, funky curly necks.




Then I took the boys to get souvenirs, another bribe. Jon watched a live band that did a hula hoop contest and the winner was this 3 yr old little girl. She was amazing and hula hooped for like 20 mins straight without messing up!

Then on the way out there were these "tree dancers" it was pretty mesmerizing to watch them. They were on stilts and were almost completely covered in leaves.



We were all tired and hungry. Zac with his jumbo animal tube and Max with his stuffed polar bear, fell asleep in the car as we got on the freeway, during traffic, with the gas light on. It was pretty nerve racking. We got off a near exit and drove for 5-10 miles looking for a gas station. Luckily, we found one and headed home.

The next day, Sunday, we went back to Utah. It was gratefully uneventful and very smooth. We had a lot of food left over from the beach days. So we only had to stop for gas twice and the potty once. We stopped 3 times probably for a total of 30 mins. And we got home in 9.5 hrs. Amazing with our 2 small children, especially because neither slept much.

Overall, it was a good trip. Very busy and very fun-no regrets. I even think I want to do it again next year!

Water . . .

is the title I am going to use to categorize these pictures...

Back in May we went to visit some friends, The Jewkes, in St. George for Memorial Day. One evening we went on a walk and the boys loved walking in the water filled gutters!


And Max had to try it too!



We just hung out, BBQed, ate, stopped at the outlets, went to Sand Hollow Golf course, played on the mini course, chased rabbits, went on a fun golf cart tour of the back nine as the sun was going down, and went to the reservoir.

So we got this water proof camera a few weeks before Zac was born and I think this is the first time we actually used that feature. This picture took only 2 tries! (its hard when I have contacts and no goggles and am holding a sick baby) But, I love how it came out! Way to go Zac!

Park City Retreat

Jon's company did a retreat a few weekends ago. It was in Park City. It started on Thurs and went til Saturday. Me and the kids got to join him on Friday afternoon. It was a nice change, and fun to be in Park City. When we met up with Jon he had free time so we went to visit a friend at Skull Candy for an hour or so. Then we headed to our hotel room at the Marriott to unload all our crap.

Very nice room. It was a suite. And it was sweet! (I know I am corny-but I couldn't resist!)

Then we met up with Jon's co-workers at an Italian Restaurant on Park City's Main Street. It was pretty good. They had this great orange cheese cake. It was reminiscent of a dreamsicle! Then we stopped to grab breakfast food at the store and went back to our room to relax.

Max would not go to sleep, so he hung out in our bed til around 12a while we watched TV. But he would not calm down. I had to turn the TV off and just lay there for 10 mins or so before he seemed tired enough to finally lay down in the portacrib and not cry and wake the neighbors.

Then on Saturday the company got everyone all access passes to the Park City Resort. We got there about 10:30. Who does checkout time at 10:00a? Way too early!

It was hardly busy at all, but it was sprinkling on and off. The don't run the zipline or the alpine slides when its wet because the brakes don't work. So those rides were running then not, back and forth.

First we went on the rollercoaster.



I was pretty concerned how Zac would handle it. Sometimes he can be so completely uptight and stressed out, but other times he can be up for anything. It all depends on his mood. Well he was in a good mood that day.

As you go up you can see parts of the coaster and there were some people come down screaming and I told him when you scream it makes it funner to ride. And he thought that was great. And I kept the tone light and excited the whole time so when it was time for us to go he was all ready. Each cart has control over how fast you can go. Each cart has brakes. The operator said that it is actually safer the faster you go (unlike the slides). So I thought great, we won't use the brakes at all. . . unless of course Zac is freaking out.

We he loved it! We screamed and I excitedly talked him through that parts that were a little tense because of the speed and the torque of the turns. But he did great!

Since it was sprinkling there were many ride options. There were some kid rides: a merry go round and this airplane thing. This is the first ride Max has gone on alone. I was a little worried he would stand and fall out, because I couldn't ride it with him or be near. But he did great too.



I don't know why but I just laughed at this picture because all you can see is his little tuft of hair, it looks like a duck is riding it! haha

Jon took Zac on the rollercoaster ride again, and when they were done Zac and I rode the lift to try out the slides. The lift was SO slow! Way slower than during ski season. Luckily we got there just before it started to get the track wet. Zac loved that one too! He wanted to control the brake, but he didn't quite get the concept that pulling it back stops us. And there were some scared kids riding alone in front of us. They were going so slow. So I switched us tracks so we could get some speed.

Then we did some miniature golf, and did a little human maze thing. Then Zac saw the bungee trampoline thing and wanted to try that. So we waited in line for a long time. The park had started to get busy by that time. He really really doesn't like waiting in line :) But after a short while they had an opening for someone under 40 lbs. so he got to skip ahead of everyone else. He had a good time, but didn't have much trampoline experience. He didn't understand the timing of when you jump or how to get a high jump by bending his legs. The ride operator would raise and lower the bungees to help him out.

Then we went to get Bajio's for lunch and to the outlets to find some sandals for Max for CA. Unfortunately, there were NONE! Everyone is selling fall stuff-how annoying! Its July for heaven sakes! There is plenty of time for fall shopping!

Anyway, that was a fun trip. It was nice to do something different. And it was really nice to meet all the people Jon works with and put faces to names.

Lexie is not so much a girly girl. So tried to make things more casual for her birthday rather than pink and foofy and traditional "Sweet 16"

My First Big Cake

So Lexie turned 16 last week. I took on the task of planning her a Sweet 16 birthday party on Friday the 10th. The only birthday party I ever remember was when I was like 7 and I don't think I had a good time, because I was worried about making sure I spent enough time with everyone and not leaving anyone out. So I decided I wanted to make sure Lexie had some good birthday memories. Last year Rachel and I threw a luau birthday party.

This year I thought it would be fun to have a pool party. I took on the task of planning it and I also volunteered myself to make her a big fondant cake. Again, I bit off more than I could chew. I finished it, but my world was collapsing at the same time.

I had slowly started planning the party a couple months in advance, but as the day got closer lots of other things started to come all at once. I was working with my parents to make final decisions, and some of those big decisions didn't get made til the night before. So plans had to be adjusted.

I should have just tossed out the idea of making the cake. But I was stubborn, and I won't take the time or money to do this unless there is an event. And I really wanted to play around with the fondant and make a tiered cake. So I pushed ahead.

But also at the same time, Jon's work had a retreat in Park City. He was gone Thurs-Sat.

I should have started the cake on Wednesday (the day after camping). But I was tired and I wanted to take a break and I headed to a friends for a few hours. Then I wanted to spend some time with Jon in the evening since he would be gone for the next few days.

Thursday I slept in and took my time getting ready. I started the cake around 10a. I didn't want to mess with the difficult task of cake...so I decided to make it out of rice krispy treats, which are more sturdy and lighter. I made one batch so I would have an idea of how much marshmallows and how much rice krispies I would need. Then I headed to the store to get the rest of what I would need and make sure I had enough butter for the frosting.

The buttercream. It was really good. This recipe is from Wilton. I used all of the 6 cups.


5 - 8" round layers (this should have been 4 layers, but my pans weren't deep enough, so I added a layer): 8 inches high
3 - 6" round layers: 6 inches high
2 - 4" round layers: 4 inches high


After covering them with buttercream I should have frozen them to firm up the buttercream...but I didn't, and my cake had to change course because of it.


This is the fondant. I learned a lot about fondant this day. Mind you, I have never taken a class about cake making. I have only watched the Food Network cake challenges and checked out a couple books at the library by a lady who is on the Food Network often, Collette. This cake is an attempt at a cake from a book of hers.


I made 2 and 3/4 recipes of fondant, and then bought a 1 recipe box of pre-made fondant just in case I needed more. The fondant has to sit over night after making it.

Using fondant is more of an art than a science, unlike how baking is often seen. It is better to be more moist. And it needs to be kneaded to a nice consistency before rolling it out. While trying to get the fondant on the cake I was so close to quitting. I wanted to throw it out! By the way, Jon was in Park City and I was alone with the boys while trying to do all this.

I tried to put the fondant on the middle tier and it ripped and cracked, and looked horrible! And I thought dang, I just wasted this fondant! But oh I was wrong. That fondant batch was too dry and the buttercream from the cake added a perfect amount of moisture. (Never use water to add moisture. Since fondant is mostly sugar water will dissolve it.)

After discovering this I added buttercream and or glycerin (also used in fondant) to all the batches to get it to the right moistness and consistency.

After that I was easier to roll it out and lay it on the cakes and smooth it to the cakes without rips or cracks, although there were still some, I am no expert.

This is the rolled out fondant for the largest tier.


The idea for the decor of the cake was to be kind of like a disco ball, or sequins and spangles. I was trying to copy it, but without much cake decorating knowledge or experience, it became more of an inspiration. This is what I was going for:

But since I did not freeze the buttercream layer, when I tried to make the impressions of sequins, with a piping tip, it just pushed the fondant into the soft buttercream, and didn't make an impression. So I tried the larger end of the piping tip and it worked better. Still not the way it was supposed to but I was something. Again, at this point I was ready to toss the cake...but all the time and money. It was probably 10p by this time. I hate that it looks all marshmallow-y. Shoulda froze it. . .

Then I made all the little "sequin" pieces for around the outside.

I was exhausted at this point, Jon called and he had just hung out by himself for the evening-gone to the gym and shopped at the outlets. Oh, how I longed to trade him. And I learned that the families were invited to come to a service project that the company was doing, and then to dinner at 6p and to stay at the Marriott. Then for Saturday they got us All Access Resort Passes.

But I was taking family to the airport at 1p and the party was going to start at 5:30p and I was supposed to help set up, and then I'd have to pack me and the boys to stay in Park City. How in the world was I going to swing all this? Then I called my mom to make some last minute decisions. I totally wanted to ditch out on the party and be like, I can't do anything else. You can handle it from here. But I felt bad. I had started this, and it wouldn't have been this big if I hadn't taken the initiative to plan a big party. After breaking down in tears at 11:00p and thinking I can't do all this. Rachel called me back. (I had texted her an hour before asking if she could come and help me "paint" the cake.) She told me she was on her way. Thank the Lord. She was a life saver!

I still needed to paint the luster dust on the random "sequins". That would have taken forever alone. But her encouragement and advice were also priceless. I hated the way the cake looked and a couple of the luster dust colors that I had ordered a month before were not quite the right colors. So it looked off to me. She kept telling me how good she thought it looked, and she had a steady hand to paint. The original design only used 4 colors, but we ended up using 9 colors to balance the look. The finished cake will be on the next post, with the party pictures.

She also talked me through what to do about the next day and everything I had to do. She helped me make a decision to just go to Park City after the airport and not feel guilty about it. She volunteered to step in and handle stuff for the party that I was not going to be there for. It took a huge burden off me.

We finished the cake and I went to bed about 1:30a with a filthy kitchen covered in powdered sugar.

More Family Activities

On Sunday, we got together with all of Jon's immediate family. After church we made BBQ pizzas, always a great endeavor-but they are soooo good, they are worth it! But only a few times a year. We made 20 pizzas. (I forgot the yeast...thankfully we were able to borrow some). We had a good time visiting with everyone. Again, I wish I had taken pictures of this!! :[ And Sarah thanks for that potato salad-sooo good! I have been craving it ever since!

Jon took Monday and Tuesday off so we could go camping with his parents. We went to Mt. Timpanogos Campsite up past Aspen Grove. It was beautiful. Very green. We drove by one site that was really sunny and thought man good thing we aren't staying at that one.

Papa, Daddy and Zac played hide n seek in the woods. Zac loved it! Papa always makes up fun games where ever we may be. While playing hide n seek the boys found out the reason that campsite was sunny. The trees were cleared out to make way for the gorgeous view of the back of Mt. Timp.



Ours was a great campsite, private, shaded, pretty, and quiet. Anyone ever camped on a Monday after a huge summer holiday? Its great-it was so quiet, no one was camping around us. There were also flushing toilets-talk about luxury!

I just thought this was a cool picture. I keep saying which pictures are the iphone, because I am just amazed that a phone can take pictures like these!
I also like how cute and happy Zac looks.


We did an easy dinner here, just stew and rolls. And I forgot the marshmallows and graham crackers... see a trend here?! I am all over the place. But Michael did make us some great banana boats with the chocolate and some Reese Peanut Butter Cups.



The boys didn't do so well at going to sleep this time. They were just not tired. They wanted to walk all over. But the dark and the uneven terrain, made that hard. So we just put them in the tent hoping they would sleep...maybe an hour later they started to fall asleep. They did sleep good after that though. I have found that it is easier for me to keep Max warm with just blankets rather than keeping him in the sleeping bag.

Again, it was so nice to be in nature. I just wish the boys had slept earlier so I could relax more.


Shortly after falling asleep, our camp was visited by a raccoon. Me and the boys were deeply sleeping by this time, but Jon and his parents saw him. They said he was really really big. Jon had left a granola bar out and it was also getting into the trash. Luckily, my uptightness about animals visiting our camp at night, made me put all our food in the car.

(but he peed on his pants during this...peeing up hill-too young to know about this. We changed him into the only other pants he had which are the shorts he happens to hate the very most! (If you don't know him, he is VERY particular...I think he gets it from his mother:) He threw a big huge fit. But Papa was able to convince him that it was ok. Then 5 mins after changing, I called him over to see a chipmunk and he tripped on the asphalt and skinned his knee pretty bad and was freaking out about it-funny story :)

After packing up camp, we hiked to Stewart Falls. The trail head was only 2 mins away. At first Zac was not into hiking. Lately he has had trouble putting one foot in front of the other. Papa was kind enough to hold his hand. But still Zac was slow and stopped at every little thing to look at, which would be fine...if it weren't 2 miles one way, with Max too.

After a while, I held Zac's hand so we could pick up the pace. But he was pretty frustrated. Even with trying to distract him with the plants and other things he was very grumpy about walking. Papa came in and decided to play hide n seek again. Zac was all for that. Papa would go ahead of us and hide in the brush. It is a very green, pretty trail with lots of plants, its also shaded about half of it. Zac then was excited to go and find Papa, and no longer thought about the hiking.

We got to the falls and the cold mist from them felt great. Zac really enjoyed eating a snack-finally. I love how dirty his face is from hiding along the trail and surprise Grandma and me.



Jon and his dad took a dip in the falls to cool off. After a little bit we headed back. I tried to carry Max in the bjorn to give Jon a break...but that was crazy! Man he was soooo heavy! It was killing my shoulders. So Jon came and saved me. And I was going to carry the day pack...but for some reason that was pretty hard too. When I hike I need to keep a steady semi-fast pace or I really loose steam. I think hiking there with Zac slow, and stopping was hard on me. So Papa carried the day pack, AND Zachary on his shoulders! Wow, I felt pretty bad, and really lazy.

We were all exhausted by the time we were done. We went home and showered and relaxed. Then we met Jon's parents for dinner in SLC (they were staying in Park City).

It was a fun weekend with lots of memories. I just wish I wasn't so tired and that I was on my game more. Usually I make lots of lists to help me remember stuff, and I haven't been doing so well with that...which makes me less prepared.

P.S. Remember to sharpen the hatchet before we go camping again.
